Before anyone blames the recipe, the shelf position or themselves, it is worth understanding the one component that decides what the temperature dial actually means.
What the Thermostat Actually Does
On the majority of freestanding electric cookers, the oven thermostat is a mechanical device, a slim bulb of fluid inside the cavity connected by a fine capillary tube to the switch behind the temperature dial. As the oven heats, the fluid expands and clicks the element off, then back on as it cools, and the oven spends its whole life cycling gently around your chosen setting. Age attacks this arrangement in predictable ways. The fluid slowly leaks or degrades, and the thermostat begins switching off too late, running the oven hotter than the dial claims, or in the opposite failure barely lets the element run at all. A kink or damage to the capillary tube, often from an enthusiastic clean or a shelf jammed against it, does the same. Hot, Cold, or Swinging Between the Two
The direction of the drift is diagnostic. An oven consistently hotter than its setting, browning food fast and setting off more smoke than it used to, usually has a stat switching late. An oven that never quite gets there, where the light stays on endlessly and bakes come out pale and dense, may have a lazy thermostat, but the same symptom is produced by a tired element working at partial strength, so the two need separating with proper measurement. And an oven that swings, scorching one bake and undercooking the next, points to a stat whose switching has become erratic, often the final stage before it fails altogether. The Simple Test Worth Doing Before You Call
An inexpensive freestanding oven thermometer, sat on the middle shelf at a 180 degree setting for twenty minutes, tells you more than an hour of guesswork. A reading within ten to fifteen degrees of the dial is normal, because domestic ovens have always cycled around their setting rather than holding it precisely. A reading forty degrees adrift, in either direction, is a fault, and noting the actual figure gives the engineer a head start before the toolbox opens. What the thermometer cannot tell you is why, and because the thermostat, its capillary and the elements all live on the cooker’s high-current circuit, the why belongs with a qualified engineer rather than a screwdriver.
